Egg Muffins

Ingredients:
4 Free-Range eggs
1/2 cup spinach/coriander/vegetable of your choice
1/3 cup of grated cheddar cheese
Salt and pepper
Method
- Preheat the oven to 375°F/190°C/Gas Mark 5
- Lay out 6 muffin cases on a baking tray
- In a large bowl, beat the eggs with a whisk/hand blender until smooth
- Add and combine the cheese and vegetables to the mixture
- Divide the mixture equally into the muffin cases
- Bake for 15-18 minutes until eggs are set
- Enjoy :)

Ingredients:
Plain Greek yogurt (or vanilla)
Pure organic honey / strawberry jam / blended fruits etc.
Organic nut granola
Method
- Fill a small layer at the bottom with yogurt
- Fill another small layer on top of the yogurt layer
- Repeat step and 2 until filled (leave space at top for granola)
- Cover top with granola
- Eat straight away or leave in the fridge for later
- Enjoy!
